A manifold is a structure that joins several tubes into one larger tube (or vice versa). Cars have two manifolds: an intake manifold and an exhaust manifold.

On a SAAB 9000, the intake manifold is located on the top/back of the engine; it's the big silver thing with one large hose entering it and four runners coming out of it, each connected to the engine, one per cylinder. It is out of harm's way, doubt that this is what they are talking about.

The exhaust manifold is the rusty-looking cast iron piece about midway up the front of the engine on our cars. In a front end collision, it's possible that it got hit, but there are a lot of other things that will get destroyed first. And yes, if the exhaust manifold is cracked, it will cause an exhaust leak. They may be referring to the "downpipe" (more vulnerable) instead of the actual manifold. The downpipe also includes the catalytic converter futher back in its path.

The Air Conditioning condensor is the very front radiator-like structure sitting immediately behind the grille - there are actually three or four radiator-like parts in this space. Due to its location, the condensor is quite vulnerable to front-end crashes. If damaged, it will leak and the AC will not work. Suprised that whoever fixed the car didn't look at it, however it may also have a slight leak that takes some time to let the freon gas (the essential material in AC systems) escape. Yes, your non-functioning AC can be caused by this part.
