Using the air conditioning in the two CSEs I have owned cuts almost 2 mpg from the mileage. I always had them programmed for Economy year around and have had no AC problems in a combined total of 405,000 miles. In most parts of the U.S. you only have a fogging problem on some days in the Spring and Fall or in the rain in Summer. When in happens I hit the Auto or Defroster button. In mid Winter the humidity is usually too low to cause fogging. I would not worry about the seals they are always under pressure but it probably is a good idea to run the compressor at least once a month to circulate the lubricant.
To answer n8's question about how to program the ACC. Set the ACC controls to where you want them (fan speed, Econ, circulation pattern) then press and release the uppermost and lowermost buttons on the right side simultaneously. The ACC lights will flash once to confirm the program. They do mean simultaneously and it my take a couple of tries.
