In the older cars, the temp gauge fluctuated a lot. It would get up near the red while sitting in traffic, and this caused much consternation among customers, which resulted in much teeth-gnashing among the Service Managers of the world. So the temperature signal is greatly modified by the EDU - think of it as Temperature on Mood-Modifying drugs. No highs, no lows. It only goes up near red if the engine is really overheating. It sits at what most of us would think of as running maybe a hair cool all the time.

If you have a stuck open thermostat, the temp gauge will read low - low like barely off the needle low. On my '97, I've gotten used to seeing this 7:30-8:00 reading once the car is warmed up, and it stays there even on the hottest July day stuck in traffic.

A failed thermostat would fail open or closed. Closed will be obvious - the EDU will go to the red. Open will be a display much lower than 8:00, and you'll get little or no heat. Thermostats usually don't fail to opening at 75C instead of 89 (or 82). So what you're seeing is normal. Welcome to the New Age, when the car only tells you what you need to know, and not only will save you in a crash, it'll only tell you information that won't upset you.
