Do NOT remove the valves. They must be in place to pressure test the head. You just want to remove the camshafts and hydraulic tappets, then deliver the head to its destination.
Don't remove the valves or do any work to them unless you've got a really good reason. Otherwise, leave them alone, and just have the shop install new valve stem seals (should be part of your head gasket kit) for you.
Most Saab head don't require valve work, ever.
