Being an anal laboratory type, I checked the thermostat of my '74 99 before and after replacing. It did not open at the temp specified, in fact I don't think it opened at all! I got a new part which worked as specified.
I've checked every thermostat since, which is not many. There have been significant errors. I would guess that about 1/3 of them did not open as specified. Half of those would have been really bad to put into the car.
Point is, it is worth checking a new thermostat before installing. At least you will know that it is operating correctly. I simply put the new thermostat in a pan of water on the stove and start heating with a medium temp burner. A meat thermometer is probably accurate enough, but if you have something more accurate, so much the better. Check the temp the stat starts to open, completes opening, and begins to close back up. Doesn't have to be perfect, but you would be amazed at how many open at 76C when rated at 89C. Good brands!
