you can leave the manifolds on, leave the chain together and just loosen it. i have done head gaskets on early VW rabbits in 2- 2 1/2 hours.
that was years ago, in a shop, in practice. could not do the same today.
if there's lots of miles you'll want to strip the head and do the valves and seals, maybe port match it or clean up the bowls, but it can be done in a day and often is.
changing the whole engine is lots more involved. the bottom end on Saabs is very durable, and if you use good oil the bores should still have hone marks at 200K miles.
that being saidd, my car at 195K probably has the original head gasket. can't prove it, but it looks pretty unmolested.
how to keep from blowing it? make sure the thermoostat and rad fan switch are working at the same temp. (if you put a colder stat in, put in a colder rad switch too, and vice-versa) and don't overheat it, ever.
