My main thought is that somehow you didn't fully tighten the oil supply and return lines on the turbo -- particularly the fiddly turbo return line with its little section of plastic or rubber tubing. Did you use new washers on the banjo fittings?
Another thing might be a bad PCV check valve, which can allow the crankcase to pressurize and allow oil to escape at the turbo seals. Seems unlikely to cost you a pint so quickly though.
The only other thing I can think of is that for all its proper play-free-ness and tightness, you've just got ahold of another spent turbo. Not all oil leakage is necessarily accompanied by excessive play, so perhaps it's just bad luck.
Maybe the head gasket has exited this earth, perhaps as a result of excessive back pressure when the previous turbo seized.
But first take a look at your oil banjo fittings on the turbo, and PCV check valve, to see if that leads to a more pleasant diagnosis.
