The on-off nature of the failure does point to a bad connection. The sensor is the one you're looking at - just under the thermostat. There is a separate sensor under the intake manifold that the engine control uses.
It might be at the sensor. Or not. The sensor doesn't drive the gauge directly. The signal goes through the EDU circuit board, and electronics there drive the gauge. So a poor connection at the EDU circuit board, a loose part on the EDU board (which I've had), or a flaky gauge are all possibilities. The last ones aren't fun because getting to the instrument cluster is a bit of a pain. (See Quasi's page on instrument panel access).
