1 - I highly doubt that you'll be able to utilize that stock cassette deck with anything other than a replacement CD unit from the Saab radio guys. I'd say you've got a snowball's chance in hell of making that work if I knew you better.
2 - The question is, are you trying to stay with the factory amplifier or are you planning on running all the speakers from the aftermarket head unit? if you are trying to use the factory amp, I think the only cable that will convert the DIN input on the amp to RCA outputs on the aftermarket HU comes from Saab. I'm in the process of trying to graft the two together right now. First attempt got me music through all speakers, but heavy ground noise as well. NOTE: I don't care how many watts an aftermarket HU is rated for, they just can't compare to a dedicated amplifier. It would be possible to pick up an inexpensive amp ($150), install it in place of the current one under the passenger seat and use the existing wires that Saab used to make things work. All the wiring that you'd need is sitting under the seat. You just need to cut off the harness connectors and plug them into the appropriate places. An amp needs a signal wire from the HU, a wire to battery and ground to work. Speaker wire is already there. The rear speaker wires are already there, just plug them into the amp.
3 - The easiest installation, bar none, is to run a patch cable from the aftermarket HU to under the passenger seat and tap into the multi connector output (that you have unplugged from the amp). With this, all speakers will run off the new HU and the AMP will be a paperweight. You "could" run new speaker wire all the way to the rear, but if you didn't have any problems with the sound up until now, it would be doing it just to do it.
