After I manage to wrestle the original, frozen one out, I pop in a plastic drywall anchor. I can't remember the size I get, but they fit pretty snugly in the hole and you can get a box of a few dozen for a few bucks. I get the normal wood-type screws and don't worry too much about getting stainless. The next time I need to pull down the tray the anchor may or may not still be in good shape, but since it is metal to plastic (screw to anchor), they don't rust in place - I can always just put in a new screw. I usually put a decent sized washer between the screw head and the tray.
So every time I need to drop the tray, I reach for the box of spares (thanks, Home Depot) and replace any where the anchor looks tired or the screw has rusted.
Is it as strong as the original design? No. But I haven't had any fail. Just make sure you have a screw in every hole, because if you miss a few holes those forces transfer to the remaining screws.
