The car will always be "calibrated" with the last known settings. I'm not an expert on calibration on these cars, but my educated guess is that calibration stores: the min/max and maybe some intermediate positions (resistance measurements) of the throttle body and the pedal pot, as well as the throttle/pedal pot positions where the safety switches activate. It uses this information to sync the pedal pot to the TB. Being out of calibration slightly may have minimal effect on how the car generally drives, with the exception of possibly at full throttle and idle positions. If the TBs are about the same (have similar resistance characteristics), you can probably switch them with minimal impact. To eliminate any possibility of damaging the TB (due to the potential of the computer trying to drive the TB motor beyond its stops) and to get optimal performance, a calibration is the way to go.
