You can replace as many things as you want. Heck you might as well do the Serpentine belt and tensioner while you've got everything out of there. It's also a great time to do the front control arm bushings. I still haven't figured out the correct recipe to replace the press-in bushing at the front, but the rear bushing on the front control arm can be done pretty quickly and the driving difference can be dramatic. if that bushing is almost shot, fresh Bilsteins will certainly expedite that process.
I skipped the swaybar bushings.
NOTE: for this job, I found the most difficult aspect to be getting the sway bar bolts to line up after the struts are in. You might first try to see if you can dislodge the strut without fully dropping the swaybar bolt.
