4 possible causes that I know of for these symptoms:
1. Low refrigerant charge is tripping low pressure switch. I think this one is unlikely because turning the ac on and off helps.
2. Relay behind glove compartment is bad. This could be it if turning ac on and off immediately solves problem.
3. Expansion valve is sticking due to excessive moisture in system causing freezing at evaporator inlet.
4. clutch air gap on compressor is out of adjustment.
I think the primary question is how rapidly the ac will start to cool after you turn it off. Does it come back on right away if you turn it off and then turn it right back on again? Does the problem appear more frequently at idle than while driving?
Post a more detailed description of your symptoms and I can tell you what has cured the problem on my cars, which have had all of the above at one time or another.
