Understeer is when you turn the wheel, but the car doesn't follow as much as the wheel is turned (the front end is loose).
Oversteer is when the back breaks loose and the car turns too much. He was probably doing a bit of both, but basically he was using it to his advantage to take the tightest line possible in the curve at best speed. This is a rally-style thing, there was a noticable differance watching the race between the experianced rally-drivers who did this well, and the more traditional asphalt-track racecar drivers, who often were off the optimal line or even spun out. One guy in a stock car was very impressive, he spun out in a turn but continued the spin with his big rear-wheel-drive stock car, pulled a sweet 360' donut, and kept on going. Anecdotally, there was one big semi-truck a few years back(yes they race these also, and no, no trailer) which was so huge that under normal driving tactics he would not have been able to make the curve, would have had to back up and turn again - but by oversteering, he could make it.

Seeing a semi-truck powersliding around a turn with it's back end loose, 50 feet away from you: Priceless.
