Usually oil floats. My guess is that you've got a combination of rust and bad hoses. Hoses break down from the inside out, and those little rubber bits mix in with the coolant and can turn it dark. Definately flush the system, but also check the hoses. If anyone of them feels soft, replace it.
The hose you mentioned ends at the thermostat. If you look closely, you'll see that the metal hose fitting is part of a cast assembly - a partial dome shape held on with two bolts - usually allen head. The thermostat is under there. It's complicated because there is usually something mounted on the top of the thermostat housing (depends on year) - often the fuel pressure regulator. I unbolt the bracket for the FPR, and then you can access the two bolts holding the thermostat housing down. That just pops off, and the thermostat is underneath. When you replace the thermostat, make sure the little hole in the thermostat rim is facing UP - towards the engine head. Otherwise, the system won't bleed properly. Always use a Saab OEM thermostat, and it wouldn't hurt to find an 82 degree one instead of the stock 87 or 89 degree (C).
