Sounds like there was a film of some sort on your thermoswitch that caused the switch to read a lower temperature than the actual coolant temp. From your description, it sounds like the switch is just kicking in at a lower temperature after the flush/fill. Did a mere flush/fill eliminate the film? Maybe, but it would be more likely if you used a chemical cleaner like Prestone Super Flush that will remove organic deposits. There is zero difference in the heat transfer properties between regular (green) coolant and MB coolant. The difference is that MB coolant is phosphate free and will result in less deposits over time in a cooling system. Extended life antifreeze products (orange) have the same benefit as MB coolant, they are more readily available than MB coolant!
The shelf life is forever, unless you live in the Mohave Desert. Heat decomposes ethylene glycol (slowly) to organic acids. Two years in a hot engine cooling system are about all you should expect to get out of antifreeze.
