The temperature of various locations in the engine compartment is interesting, but has little to do with the gauge reading. The temperature gauge reads the temperature of the coolant in the engine. That's the temperature that the thermostat, radiator, and fans control, and that's the temperature that can warp heads and do damage. The temperature in the engine compartment will depend on airflow over the radiator and how close you are to the exhaust system. Measure near the exhaust header and you should be able to see temps near 500F.
With stock components, the thermostat tries to hold engine temperature at a MINIMUM of 89C, which is 192F. The radiator fan comes on at slow speed when the radiator temp reaches 90C (194F), and high speed at 100C (212F). 10 o'clock or so on the temp gauge is the coolant around 212F.
If the fan wasn't coming on, that can easily overheat an engine. I assume that was fixed either with a new fuse, relay, fan, new thermoswitch. I'm not sure what your question is about the gauge reading. Again, temperatures in the engine COMPARTMENT aren't controlled by the cooling system, and they don't show up on the gauge.
