This goes for almost any car, although cars with Dexcool will go much longer. If left more than a few years, components of the antifreeze begin to break down and cause trouble -- leaky heater core and radiator, hoses, gaskets, water pump, etc. Phosphates, silicates, and aluminum oxides that drop out of solution cause electrolysis which is seriously harmful to all parts of the cooling system. I have seen hoses less than 60k miles old that are cracked and disintegrating throughout their entire length due to electrolysis. The Saab 9000 cooling system has never been particularly strong and really needs extra care. Still, all this goes for any make/model car.
You'll obviously get new coolant when they replace the headgasket. I would also recommend that you have them carefully inspect the hoses and replace the thermostat while they're at it. The T-Stat is a wear item and if your coolant is original, it's past due for replacement.
