1. As Jim says, the trip computer has two settings. The "current fuel economy" which will be fluctuating all the time, and the "average fuel economy" which is noted by the slashed 0 ("Ø"). Both of these numbers are returned from the fuel injection computer based on fuel injectors opening and closing. Simple but elegant solution. They tend to be a little high, but accurate enough to get a good idea. There's nothing than can be adjusted or maintained here.
2. 9000 trannies tend to be very reliable. Unless you car has a ton of miles on it (like over 200,000) I wouldn't even been concerned. If you really wanna try, put the car in 5th and get up to 3000 rpm and then stick your head out the window. Chances are you won't hear anything, but you might. :)
3. The gap in the manual is correct. If the old gap was higher, it's 'cause they were misjusted or plain ol' used up. As far as plug selection goes, I've never tried RapidFires, but my guess is they're just a marketing gimmick like Splitfires or any of the other bizarro "new technology" plugs. I usually run NGKs but when I'm feeling spendy always opt for a set of Beru Silverstones, which I like quite a bit. Jim's advice is solid here - keep your eye on them and if things feel off, throw in some NGKs (or Berus! :)
4. I usually see between 170 and 180 on my 16v cars. As long as they're all above 150 and within 10% of each other you're in good shape. 187 is high based on my experience, but I never checked my '86's compression.
5. They Haynes book is the only way to go (literally!) unless you can get your hands on the factory books.
6. Start with that rubber seal, but it could be split or damaged plastic or the pump itself. I've seen 'em all on 9000s.
