Double clutching is a method of getting the two gears spinning at almost the same speed before meshing them (that's M E S H not MASH). this saves wear of the synchros ,or if they are already worn , saves wear and tear on the gears .
If down shifting (say from 3rd to 2nd)instead of shifting directly from 3rd to 2nd , you shift from 3rd to neutral , let the clutch out then give a little burst of throttle to get the layshaft spinning faster (don't overdo it though) . Then depress the clutch a 2nd time (hence the term "double clutching")and shift into 2nd . Voila ! you are Stirling Moss .
In the good old days many racing and sports racing cars had no synchros on any gears so it was necessary to double clutch all the time .
