You milage may vary...
Cruising on the highway with a manual transmission, you should see high 20's to low 30's - obviously some folks do better. Around town, expect mid-20's for reasonable driving, but if you're heavy footed, you can easily drop it below 20.
With an automatic, drop 2-3 mpg off. But only time and your driving habits will tell.
As to handling, I find the 900 feels more 'tossable', but I believe the 9000 handles better. Unmodified, I find the 900 tends to lean more than a 9000. The 9000 may weight a bit more, but it has three advantages over the 900 - the 9000 is shorter (honest, it is!), it's lower, with a lower center of gravity, and third, the wheels on the 9000 are closer to the corners. The 900 has most of the engine weight well forward of the front wheels, and that makes for more understeer. The 9000 has the wheels tucked under the engine.
I find the 9000 feels more 'bolted' to the road. But so much depends on model, age of the car, and tires, tires, and, er, tires. A 900T in good shape is a pretty sharp handling car, and a non-turbo 9000 is sprung a bit more softly. But tires and the condition of the suspension (bushings, shocks) make the most difference.
I remember my '86 900T quite fondly, but I find the handling of my 9000's to be better, the snow performance much better, and overall, the 9000 is much more comfortable.
