If you go with one stock and one poly, it doesn't matter which is which. They work together to hold the engine in place. If one is soft and the other hard, the soft one will still move.
The purpose of the upper mounts is to control engine twist. You will notice a difference if you shift under load - hard shifting at high rpm. You won't feel a difference under 'normal' shifting. Even then, you are mostly keeping engine movement to a minimum with stiffer bushings, which can make for smoother shifts.
Two poly bushings will be stiffer than one poly and one stock, which is stiffer than two stock bushings. Stiffer means less engine movement. Stiffer also means more engine vibration gets transferred to the chassis. With some engines, two poly bushings and the car still idles smoothly. On others, two poly bushings and the steering wheel feels like a paint shaker at idle - totally unacceptable. And you won't really know 'till you try it. I assume with the balance shafts in the 2.3, it'll be smoother than the 2.0, so you might get away with two poly. Just be aware that on some cars it can be a poor choice.
Of course, there are mounts on the bottom of the engine, too. It does little good to make the upper torque mount stiff without addressing the lower mounts.
