That hiss you heard was the sound of air going INTO the tank, not escaping out. As you drive, the fuel level drops, and as the level drops, air enters the tank through a one-way valve in the gas cap. If that valve clogs, air can't get in. As the fuel pump runs, it creates a low pressure in the fuel tank. The fuel pump has to pump harder and harder to get fuel to the engine, and your fuel pressure will drop, and the engine will stall.
I'm pretty sure the one-way valve to let air into the tank is in the gas cap. It is on the 900, and I doubt Saab changed that for the 9000.
As to why low tank pressure would cause the fuel gauge to read high, I'd have to think about it.
