That sounds a lot like the AMM. The AMM controls 100% of fuel flow. The O2 sensor controls only 25% of fuel flow, so even a totally dead O2 sensor would still allow the car to run decently.
Since when you step on the gas pedal, the Check Engine light comes on, I suspect the AMM even more. The throttle position switch knows that you've pressed the pedal, but the AMM doesn't respond, so the ECU sees this disparity and sets a fault.
If you can get a known good AMM, swap it in. Remember - not all AMMs are the same. You have a newer one, not the old-style -005. They ARE NOT interchangeable.
