Thanks for the great comments. I will post some more photos after the paint job.
I spent last night (filled with turkey) doing some experiments with this water temp issue that I had. I wanted to test weather I could put my water temp sensor in boiling water and get a reading on the temp gauges. I did not. I scratched my head for a awile, thinking it must be this or that, than it dawned on me! The sensor must be grounded! and the reason it did not read before was that I used epoxy to put it into the manifold, effectivley isolating it from ground. It was getting a weak ground, making the gauges read really low, went for a quick drive and the temp is up! Silly mistake....moral: don't epoxy or tape your water temp sensors into the block or they might not work. It even says so in the VDO instructions.....who reads them anyway.
