Wholly possible and with benefits. But not without some forethought.
It has been done several times especially in Scandinavia. I am giving it a whirl myslef. Yes rear discs look cool but they also have the added benefit above performance. I have not yet actually needed anything more than rear drums but converting to rear discs has 2 other benefits:
1) Obsolescence: Using discs and calipers from a modern car will save time and trouble and expense when the drums and shoes and whatnot become harder to source - or even impossible.
2) Wheel choice: Converting to a different hub bolt pcd gives a wider choice of wheel. V4 minilites are going for over £700 here. Saab 99 Minilies (114.3 x 4) can be found for £100. c900 Minilyes (108 x 4) can be had for no more than £200.

What has not been mentioned on my site yet - as mentioned earlier in this thread - is that you should use a brake bias valve in the system to adjust brake bias accurately between front and rear. Too much bias to the rear (as is likely without adjusting it) will cause the rear wheels to lock given the rear is significantly lighter.
