Hey Brian,
You got that right on the service centers! One has to be really careful. In fact, I refuse to have rotors turned anymore, as they tend to warp after, due to minimum material, just as you say. Easier in the end just to replace them.
I've been thinking of getting some 93mm oversize pistons for a V4 performance rebuild that would get me to 1815cc's. In that case, the piston size would come first. Similarly, it may be a case of using what you have or what you can get.
