The first thing to do is isolate the problem. Do this by first checking the hydraulics. Pull back the rubber cover at the slave cylinder and have a partner push in the clutch. Check for proper movement of the slave cylinder/release arm. Do this when the car seems to work properly, then check it when it's "broken".
If you get no slave movement, then you know it's your hydraulic system. If you still get proper movement, then something is happening INSIDE the bell housing.
Since it's a problem that changes with time, I'd guess it's in your hydraulic system. Bubbles/air in the system, a leak, etc.
