I have a performance cam in my Sonett that I am very happy with. The motor was done by MSS and I can rev safely to 7500 RPM and actually beyond to 8000, but that's getting dicey. This requires stiffer valve strings and balancing, which you say you plan to do. Unless you open up the heads, I'm not sure you'll get as much benefit. You have to look at the curves- torque and HP vs RPM. If your these curves flatten out at 6000 RPM because you can't pull enough air/fuel mixture through the top end, it's not much good to go to 7500.
As to idle, the car idles just fine around 900 RPM. It does have a burble, but it's not a problem. The car has a lightened flywheel, so it revs almost instantly.
MSS has a couple of grinds depending on what you want, with valve springs to go with them. One grind seems better suited for a 96, the other for a Sonett. Call Jack at MSS and tell him what you're looking to do. He'll give you great advice and tell you about any pitfalls.
