I guess you can do about anything if you have enough determination plus money and/or welding skills. See this link for an amazing website showing the lengths to which a talented person can go in rehab-ing a 95...

Good news about floorpan rust on any 95, 96 or Sonett is that most areas are basically flat metal with stiffening channels stamped into it -- if you can cut out a reasonably flat section containing the rust damage, you can take it to a sheetmetal shop and get a replacement bent to order and then weld it in. Suspension mounts. wells, etc. are more complicated but hey, it's all just bent sheets of steel under there, no unobtanium or hand-carved ash wood or anything.
The big question is always how far can you stand to go and is it worth it?... which only you can answer. The one thing I'd say is that 95s are extraordinarily cool and nowhere near as common as 96es, so even if you decide you don't want to take the plunge, be sure to give someone else a chance before you consign the thing to the salvage yard...
