Aaron, you should be playing the horses and buying lottery tickets every day, because Lady Luck has smiled upon you.
There have been V6 users on this board and others who have done all the required changes and still have had to replace the engine after that scenario I described. You've happened across a great engine, one that's either held up under the load or had been replaced prior to you owning it. Don't get me wrong: that's a GREAT thing, and if I were you, I'd feel incredibly lucky that I have been unaffected by a potentially catastrophic engine problem.
And you're absolutely right about the V6 having more of its torque in the low end. That's good for low-speed entrance ramps and getting ahead of some poky guy in moderate traffic. But that V6 has less HP and torque than most V6s, so you're likely to be shamed by any late-model minivan at that light-to-light challenge.
And I wouldn't use Ebay as a determinant of market value. It's likely that the V6s are going to folks who just don't yet know about the hidden maintainence costs. Realistically, if you were in the market for a used Saab today and had the choice of a V6 and a turbo, both in the SE trim, which would you choose?
