3 vs. 2,5 inch exhuast and backfire issues?

Are there any whwn installing a 3 inch exhaust vs. a 2.5 inch? I am still dragging my feet on replacing the loud back muffler on my car because if I am to do so, I want to replace it with something better (from the cat back... for now).
A local shop says that they can make a 2.5 or 3 inch cat back for under $300. Seems to make more sense than buying a Saab OEM or JT for $400 + shipping and then having to install it.
Any thoughts on local fab vs. made exhausts?
What about 3 inch vs. 2.5 in?- air flow issues?
