Going 3" from the stock DP and cat does not make any sense. And a 3" pipe with straight through mufflers makes a lot of noise at idle and will gargle as well. So forget the 3" especially for a 2.0 engine. If you were heavly modified, then I can see some discussion. You would be better off with a 3" DP to a 2.5" cat back. A 3" cat back would make a lot more noise but would have very little advantage over a 2.5" cat back.
With a custom exhaust, there may be some fit and vibration issues. Flex joint(s) need to be located in the right places. The engine moves on its mounts and the exhaust system interaction with this can be unpleasant if not done right.
A Saab Sports Exhaust is an easy DIY install and will not rust out. The custom exhaust is not stainless steel I expect. And most shops do not do mandrel bends and the diameter is reduced in the bends, or crimped or both. Even the 3" systems from JT can be horror shows, and these are meant to be build for a specfic application.
You might want to replace the pipe from the cat to the resonator that has the flex joint in it, these also do not last forever, so best to have a clean start so you are not into it one year later. And the older flex joints are brittle and the disturbance of replacing the system might make it fail in short order, so treat with care if you are preserving it.
