Here we are talking about the car not starting when cold outside. Several this winter (myself and others) have been trying to sort out problems with these cars not starting well in the cold. In my case, the car ran fine after it FINALLY got started (crank, crank, crank .. no start), but the cold starting (starting after letting sit until cold) problem persisted in intermittent occurences. Quite an annoyance when it did not do it regularly, and when it ran SO WELL after finally getting started. There is much on some of the problems in the archives... try "cold start", "hard start" in the search field.
Regarding your t-stat ... they rarely seem to have caused starting problems as in this case ... and you may feel it is only an annoyance, but your engine is actually taking a long time to warm up when it is stuck open, and this is bad for other reasons: I could name several, but the basics are that when cold, it is much harder on your engine, and could eventually lead to larger problems. Plus, I bet your heater doesn't warm up very fast if you are in a cold climate!
