At operating temperature, a 15W40 has the same viscosity ('thickness') as a 5w40 or 0w40. By definition, to be labelled a '40' the oil has to have a kinematic viscosity of between approx. 140 to 200 cst at 100C.
The 5w and 0w40 are thinner only at low temperatures (eg. cold starts). This is their advantage over a 15w40.
There are small variations between xw40 oils. Some are near the top of the allowable viscosity range, and others (eg. M1 0w40) are near the bottom. But these differences are not enough to cause noticable differences in engine temperature. And if they were, a properly functioning thermostat should maintain the designed engine temperature.
A 15w40 is pretty 'heavy' at the cold end, but should be fine for SoCal etc. A 15w40 should be very shear stable, even if not a synthetic so cheaper dino oil could be used. I use 0w40 and 5w40s synthetics (but I live in Canada and its cold!).
