The 15w should warm up to operating temp a little bit quicker than a 0w or 5w because of the initially higher viscosity. My guess is that the effect of this on overall engine temperature at any point in time is minimal, because heat from oil pumping losses is small compared to heat from the other major source of heat in the engine (combustion). But I don't know that for certain.
PM is right, I think, that the thermostat should take care of this, whether sitting in traffic or on the freeway at 120 km/h. And the AC can be a big source of underhood heat.
I find that my 9-3SE sometimes has a surprising amount of underhood heat (probably why the DIC are not the most reliable..) when I pop the hood. No problems with it though. Hopfully none for Albert either!
