There IS that much differnce in brake pads. Brakes are something you use on every drive. Brakes that work properly, and don't just stop the car but stop it in a controlled manner and in the shortest distance, are your best insurance against an accident.
The stock SAAB brake pads are good. They are also overpriced from the dealer. A good independent SAAB shop can get equivalent brake pads for less than the dealer's price, and usually the independent shop labor rates are lower. Midas does volume business on mainstream vehicles. Generally the brake pads are a harder compound so they don't wear out as quickly. They also don't stop the car as quickly. To some people this is a 'value'.
I'd say if the stock brakes are good enough, get the work done through the dealer to preserve your warranty. If you really want to save a few dollars, or want more brake performance, go to a good independent SAAB shop and let them get you factory equivalent (Pagid or Minitex) or higher performance brake pads (EBC 'Greenstuff' or Minitex 'Redbox') to meet your needs.
