How do I prevent getting hosed at the dealer (maint.)?

I went to the dealer this morning for an oil change - I'm not exactly... well, not at all mechanically inclined, nor do I even have anywhere that I could be were I interested in it. I have gone there many times before (Charles River Saab in Cambridge) and they seemed to be totally honest with me and not charge extra - but those were always scheduled Saab covered times.
This time the man came out and told me that they found the following:
1) Parking Brake needed adjusting - 44.50 - labor
2) font brake pads are worn, very low - 97.90 labor and 98.47 parts
3) clean bulkhead drains - 60 -labor
4) cooling system hose loose - warrenty (this was a known issue - 128 motors has the worst service dept in MA and they ruined that previously)
5) then the oil change and haz material disposal.
I was expecting like $40 total with the oil change and walked out paying $350...
1) can you tell me if I just got raped?
2) can you tell me how to handle such things in the future. I asked my friend and he said that I should have asked to see the brake pads - but the thing is, they could have shown me a toaster oven and I wouldn't know the difference between it and worn pads or new pads.
is there a book, ideally for saabs, that one can get to know about repair issues?
