I didn't realize the door speakers and amp were an option on the SE.
But, that brings up a good point. While the door speaker locations are pre-wired, the other end of those wires are not connected to the head unit in the dash since they are designed to be connected to the amp that comes with the Premium Pak you mention. The other end of those wires have a connector that is designed to plug into an amp just for the door speakers. (You can see all the details about this in the Audio Guide I mentioned in the FAQ section of this site.) Since you don't have the door speakers, you also don't have the amp.
You can certainly add your own amp (you don't have to get the Saab amp), but unless you find a very small amp, you will have to install it somewhere else than the standard location of the Saab amp (behind the passenger side kick-panel on the center console...it's very tight in there and the Saab amp is very small). Some people just put 2 or 3-way speakers in the doors and tie into the speaker wires for the dash speakers, disconnect the dash speakers, and just run the door speakers off the head unit. If you want to keep the dash speakers, though, you should get an amp to drive the door speakers.
