The mass air sensor, propably the hot film type, has a small heated metal surface that it keeps at a constant temperature all the time for different air flows. The amount of electical current required to keep the heat is proportional to the air flow. Hotter air will be less dense and will produce less cooling effect. The sensor takes care of any non linearities interallly I expect. Different barmetric pressures are similarily are a non-issue. Changes in humidity will have an effect as the signal then is not proportional to air flow as there is a variable amount of water vapor.

The air mass sensor will probably have a screen or honeycomb upsteam. This is important as it creates a flow profile where the signal is proportional to the average flow. Remove at you peril. There will often be a screen downstream as well, it helps with the flow profile to some extent, but it protects the sensor, which is fragile and does not like being touched or contaminated. Some sensor drift is not a problem, again the O2 sensor loop is the master control.

The ECU has a correction factor that takes care of things like this and its all dealt with by the 02 sensor loop which balances fuel and O2 issues on a continous basis when not running open loop on boost etc.
