1999 9-3 : problem with engine coolant gauge

Hi,
My engine coolant gauge is going hay-wire. When I start up the car cold, it slowly creeps up to 50% as the car heats up (normal). However, after driving for 5-10 minutes the needle will all of a sudden just die and drop to the very bottom (as quickly as if I shut the car off). Then after a few minutes it will slowly creep back up to the middle position... for a few minutes then die again.. this repeats until after driving for a while it always stays in the "dead" position.
Noticed that whenever the coolant gauge is dead, the radiator fan goes on and stays on no matter what, even in recent cold weather. Gas consumption is up lately too, but I'm not sure if it's related or more 'cause i'm having too much fun with my 200HP car hehe.
Anyone experience a similar problem? It's under warrenty, but I don't quite trust the dealers 100% and I want to be able to give them as much information as possible when I go in..
Any info is appreciated!
Thanks,
Andre
