Howdy. I've got a 2003 Conv., and recently had my locks re-programmed at the Dealer. Here's what's available to you if you swing by a shop and have them hook up the Tech 2:
All doors lock when you go ~10 mph.
One press of unlock button (on remote) unlocks all doors (instead of one press for driver's, second press for the rest)
Driver's door unlocks when key is taken out
All doors unlock when key is taken out <-- This is the real jewel - apparently nobody knows how to do it, but it's there under the European options on the Tech 2. Dealers will insist you're an idiot if you try to tell them it's possible, so unless you feel like bickering with a service manager, this may not be an option. There are some shops that know how to do it, so maybe you'll get lucky.
On that note, if anyone knows a place in the DC area that knows how to do this, I'd appreciate any leads. VOB Saab, where I bought the car, claimed ignorance.
So the short answer is - no, you can't make them lock when you put the key in, but you can have them lock as soon as you move.
