Leather, suspension, wheels, and auto climate control are the major items (I might miss something here but I'm sure others will add). You can also check out Scott's model archive here on SAABNET, it lists the details of the majority of SAAB products past & present.
Not all SE models came with the HOT motor. Early models and automatics (prior to the T7 ECU) could come with the 185HP motor. The only conclusive way to tell is by checking the VIN to see what motor lurks under the hood. Search here on SAABNET for "Hot or Not" and you'll find leagues of discussion on the topic. HOT=200HP, NOT=185HP
Don't shy from the 185HP motor. It is easily tuned to make up the marginal HP difference and by the seat-of-pants sensation, doesn't feel much less capable speed wise.
The T5 (98-99) equipped motors are easily upgraded with aftermarket parts, the later T7 (00-02) cars are more difficult to fiddle with as the are more tightly electronically managed ("sensorized"?).
