Your '01 has the motorized throttle, like mine. We don't have an AIC valve to stick open. Mine doesn't over-rev during a shift, so I don't think it's a 'chip' thing.
Is it still under warranty?

There's still a cable from the pedal to the throttle-body. The cable could be sticking with crud? The cable-drum is hidden under a black metal shroud, so you have to take some stuff off to see it. Watch the cable-drum while someone works the gas pedal (don't need the engine running). Or turn the cable-drum & let it go. It should snap back without sticking. (You'll notice the throttle plate itself doesn't open...)
If you don't see any sticking with the cable, then maybe clean out the TB, especially if it looks dirty inside.
