I had a similar experience on my 99 9-3S at about 60K. The car was just out of warranty and I took it to the dealer and demanded they fix it anyway, they replaced the clutch master cylinder and sent me on my way. this worked for a year or so. My symptom was clutch all the way to the floor when the car was cold. I could disengage the clutch enough to stop the car from moving, but not enough to actually change gears when in motion without destroying the synchros. That mean backing out the driveway in reverse, shutting the car off, putting it in third and launching the car in third (from every stop light and stop sign) until the car warmed up. Then I would get some clutch feel back (it would start to resist about 1/2 way to the floor). I could not get to the dealer for a while, so life went on like this for a week or two. Then it just went away. Full clutch feel. I t came back once for a week, and then disappeeared again (both times in September, go figure). Anyway I have 130K miles on it now and have not had anything replace (including the clutch itself, luckily enough with the 3rd gear burnouts).

I think the other poster was probably right though, it is either air or some debris in the hydraulic line screws up the clutch. There must be some sort of limp home mechanical clutch mechanism at the very end of the clutch travel that allows you to engage and disengage the clutch without any hydraulics.
