Is it too late when oil light comes on?

I took my car in to retorque my headbolt right before the vacation and the shop really did it to me. They screwed up the gasket and my oil was leaking thru out my 3000+ miles trip.
At one point, my oil light came on....
My car was taken back to this shop and they said they don't think I have a permanant damage, but should I trust their word? They didn't take my engine apart. All they did was listen to the sound...
As you can see, it will take a long time to start trusting these guys again.
They supposedly fixed that and I had them change the oil, but after all that, they found coolant leak under my car, so it's still at the shop...
Any suggestions to what my actual damage might be?
