Most of the responders have already given you good advice regarding finding the point at which the clutch starts to grab. Trying to tell you how to drive a car with a manual trans is like trying to tell you how to ride a bike.
Use the handbrake as suggested to hold you from rolling bacwards on a hill until you have mastered your clutch control.
Usually you will let out the clutch to the point it start to grab, and to move forward and then release the clutch the rest of the way. It all happens more quickly then described.
After you master the take off, you can then work on downshifting. To minimize the lurching that will take place if you do not match revs, try reving the motor a little when you depress the clutch to downshift before releasing the clutch. In time you will master a smooth downshift into a lower gear.
However, once you master the basics you will now enjoy real driving. You will never have more control over your vehicle than with a manual trans.
