I have a 2001 viggen vert., and a 4 and 6 yo. They do fine with a booster seat, but they can't stand the sun and wind in the back. Thinking back to my infant days, I think it very problematic fitting in a rear-facing infant seat in the back. The front would need to be pretty far up.
As for each of ingress and egress, its fairly simple, especially with the top down. With the top up, you'll probably have to move the seat forward to get the infant seat in and out.
I did hear a woman at the dealership complain that she had trouble putting in a carseat. It was a toddler carseat with a high back. I believe the angle of the seat and headrest made it very uncomfortable for the toddler. You'll notice that the seats have a pretty tight angle between the cushion and the back, i.e. the cusion angles up. Fits fine for someone will put their butt in the seat and angle their knees accordingly. But, for a flat bottomed seat, it can appear uncomfortable.
As for safety, I don't really feel all that comfortable with my kids in the back of any convertible, so we only cruise around the neighborhood every once in a while. It would take a very rare significant accident to harm them, but why take the chance.
Anyway, I suggest you go to the dealer to check it out. Bring the car seat with you.
