EBC Pads without EBC Rotors?

Reading through the posts, I saw someone mention you should not run ebc pads without the matching ebc rotors. Supposedly, the kevlar that greenstuff pads are made of eats rotors for breakfast.
I have the greenstuff pads and yes, they did in fact eat my rotors. I'm not sure how thin my rotors are (they were on the car when I bought it) but I do have the steering wheel jumping out of my hands when braking off of a highway. I was thinking of getting new rotors soon and had considered cross drilled and I'd heard good things about brembos. However, I don't want to buy another pair of rotors only to have them fall victim to my canibal pads.
Can anyone substantiate the ebc pad claim?
