Different dimmer philosophies.
You describe the stereo wants a positive voltage signal to trigger it into the 'dim' mode. For that, just tap something off the headlight switch? I don't know wire colors right now, so maybe you'll have to check with a voltmeter.
The wire you're trying, is probably power going to the bulb itself, which varies up & down in voltage as the brightness control is turned. That's what you'd use for an older stereo with simple light bulbs for illumination.
